Braised Dried Scallop Shimeji Mushroom with Spinach

I learnt to cook this dish from my office cooking demo. The chef is from a restaurant in a club house. And i cooked it last week, but i din take a picture of it. Because it taste really nice and the sauce taste very much like shark fin soup, i would like to share. Is not difficult to cook but quite a number of steps. But they can be done over a period of few hours.

That day i cook this, i forgot to bring back the recipe, so i omitted the chicken stock and still very nice, so may be u can omit the chicken stock if you find difficult to prepare the stock.


Main Ingredients
400g Spinach
30g Dried Scallops
1 Pack Shimeiji Mushroom

Seasoning
200g Chicken stock
1 Tsp Oyster Sauce
1 Tsp Sugar
1/4 Tsp Salt
1/2 Tsp Light soya sauce
Dark soya sauce (for colouring purpose only- can omit if u think the colour is ok)
Scallop water
2-3 drop Sesame oil
2 Tsp Corn Flour

Method
Soak the dried scallop in water (overnite, or afew hrs)
Steam the dried scallop with it water for at least 1 hr
Shed the scallop. Set aside the scallop & water

Wash, cut spinach
Blanch spinach in boiling water, add alittle salt, sugar, oil.
Remove & drain the spinach when turn dark green. Set aside on serving plate.

Cut & Blanch mushroom Set aside.

Boil the seasoning, add the oyster sauce first and fry for a while till fragrant out then add in the rest.
Add shed scallop & water boil for awhile
Thicken with corn flour.
Add mushroom and boil.
Pour over the spinach & serve.

Add alittle sesame oil before serving.

Schizandra Pear Enzyme

500g Pear
30g Schizandra Berry
80g Chinese Wolfberry
30g Southern Apricot Seed
30g Northern Apricot Seed
90g Oligo
250g Lime flower honey / wild honey

Pear rinsed, dried & sliced with skin. Herb ingredients need not be rinsed.

Stack the ingredients in sequence, the herbs, pear, oligo & honey. Seal tight with food wrap, cover with lid. For 2 weeks

朴肺止咳,滋肾护肝。

Marble cake



Look at my marble cake....hahaha like over baked...bec i went out for lunch after i put into the oven....too careless liao....hahaha....but hope it is ok inside....:D

















Ok, inside still very nice....the top layer is actually the cocoa....hahaha..made for tomorrow trip to kuantan...heehee...plan to make another one Nestum cake later if i still have time....

Enyzme Book

This book i got it from bookfest at suntec city. This book talk about enzyme making using oligo & wild honey but used lesser lemon, some of them din even use lemon. Mainly are mixture of fruits (at least 2 type of fruits or more) very different from the other book which used rock sugar & lemons. Also the consumption is different.

The other book also can be found at the bookfest, they are placed side by side....and both have less 20% discount. The bookfest will end on 23 Dec.

Enzyme -Tomato

Friday harvested my 1st batch of tomato, it taste really good! my girls like it. So decided to make 1 more using oligo....hahaha. it is really tasty not so strong of wine smell though has tomato smell...:D
Using a 2-litres container
Tomato - 1 -1.5 kg
Rock sugar - 300 - 400g
can divide them into 3 portion, place tomato then rock sugar, repeat the process until the 3rd portion place in then seal with plastic food wrap and cap.

Sponge cake

Made this sponge cake on Friday, becos my no 3 doesnt want to eat the banana cake. This sponge cake looks very nice and even, but still slightly hard. Ok lah can! hahahaha

Pineapple enzyme

Harvested my pineapple enzyme, this i used all oligo, but taste not sweet and sour. Shld used more oligo. However, it looks very clear, nice!

Banana Cake


2nd time making the banana cake....hahaha....haven make the marble cake...this one abit different from the 1st time becos i used whip cream instead and less banana essence...so it has stronger butter taste.

Banana Cake








Actually tonight wanna make marble cake end-up making this banana cake instead.....i went to sheng shiong and ALL the banana there are not ripe cannot make so i bought green papaya wanna make enzyme....so i told my hubby abt it, then he quickly said he will go to NTUC and buy banana....so we made the banana cake loh and guess what....the whole branch of banana now left 1...i used 3 and my children ate them up....hhahaha.....i think wed then i will try the marble cake ....yeah!....Looks better than the sponge cake yesterday lah...but i haven taste it cos still hot.....need to cool first.....

My first - Baked Cake!

Went to buy a new oven using the capital land voucher....cos my built-in was not working despite trying so many times sigh! i think i have used it less than 10 times! so just buy one and see how....so tried Aunty Irene's recipe on Traditional Sponge cake....dont look nice....but still can ...heehee...so exciting, tmr night wanna try make marble cake...kekeke...now i can understand why the kapok club ladies can make cakes non-stop....hahaha may be in near future my blog will be cake making instead of enzyme making liao...oppsss!!!!

Enzyme - Grapefruit


These 2 tubs of grapefruit enzyme was over-due...:D too buzy to harvest....oh...very nice or rather just nice....not too sweet nor too sour....yeah! and lucky wasnt moldy!
and yield 700ml + 600ml....quite alot....gave some to Iris today....hope she like it...but her 2 kids dont like it....

Enyzme - Pineapple


Bought these 3 pineapples from NTUC yesterday, $0.85 each....very cheap and big....






















And made them into pineapple enzyme of course. And these 2 tub of pineapple enzyme purely using oligo....hope they wouldnt become moldy...recently my enzyme keep becoming moldy....very sad....radish and red dragon fruit....:<

Oligo

This is another brand of Oligo i bought from organic shop, this is cheaper $6.80. Becos they have no more stock, this one left 2 tubs and the green bottle ones no stock. So i bought 2 of this instead. Also asked the boss about discount if buy more. She said to become member upon purchase of $50, thereafter discount will range from 10-25% depends on the products.
